If you’re like me, you’d never pass up a chance to make pasta salad for lunch! Here’s a really simple recipe that will keep you coming back for more! 😉
You’ll need:
- Roughly 1 lb. of multi-color rotini
- 1 pint of cherry or grape tomatoes
- 1 can of olives
- 1 cup (or more :)) of diced cheddar, mozzarella, or pepper jack cheese
- 1 cup of chopped salami
- 1/2 cup of chopped pepperoni
- 1 bell pepper, diced
- 1 bottle of Olive Garden Italian Dressing

To start, of course, you’ll want to cook your rotini and allow it to cool until it is almost room temperature (it’ll melt your cheese if it’s too hot).

While you’re waiting for the pasta, dice your peppers, cheese, and deli meats and dump them in a large (and I do mean large) bowl. Drain your olives, wash your tomatoes, and throw them in the party as well.
Once your pasta’s cooled, add it to your masterpiece and drizzle the Italian dressing over it until you feel like it’s enough (yeah, precision science here). Toss your salad together, add more dressing if desired, and voila! Instant goodness! 😀
