As of last week, I’d never had any kind of pancake other than just the plain old boring regular kind. 😉 But all has changed! 😀 As I was scraping some leftover pumpkin puree into a tupperware, I remembered a recipe I had seen for pumpkin pancakes last month. I was determined to try it. So try it I did– and I was very pleasantly surprised!

Just about everyone else in my family enjoyed these as well–I ended up making a triple batch! 😮
I personally thought syrup wasn’t really necessary; they’re perfect on their own.
